Soon-to-be sausage

150 lbs on the hoof, 60 lbs dressed. Two hours from the field to the butcher. I had nothing to do with it but the skinning & gutting & delivery. IOW, the cowboys found it in the trap, dragged it back to the barn, and strung it up. They showed me how to do the rest, and helped out. We’ll probably butcher the next one for smoking.

    Ok. I had to call and ask. It is a feral hog. Looked like a small white tail. Can’t wait to taste the sausage….

    We’ll probably butcher the next one for smoking. <<< Wow, that's really strict!! Up here in Wisconsin they just tell you to put out your cigarette ….

    Okay, I know I’m old now…I work in a hospital, see LOTS of BAD Nekkid, and frankly, this candid, nude shot of a spread-legged eatin’ critter turns me a LOT more than a spread-legged shot of an unclad person of the lady-sort. MMM, BBQ! The R, Man

      This one here will be all breakfast sausage. The next one will be…something, I don’t know. Probably quartered & smoked. I’ve got a lot of ideas I’d like to try out. First, I have to learn how to butcher the durn things myself. Then grinding and stuffing link sausages. I’d love to do a salt-cured smoked ham deal.

      I actually need to learn how to hunt or track the durn things, since it will be a major protein source in the coming apocalypse.
